Healthy pasta

Wanted to cook some healthy food for the kids. Choices here are limited, healthy food has to be home-cooked. But to kids, healthy food means yucky food. To prepare a healthy meal is one thing, getting them to eat it, is another. I have learned to camouflage my food in such a way that, it's healthy and they will still eat it.

This is whole grain pasta with sardines, pork and brocoli. Can't see a trace of all the healthy stuff but they are all in there.

Sardines are known to be the healthy fish. It's one fish which you can eat from head to tail and down to the bones. Extremely rich in calcium which is essential for kids to have good teeth and bones.

Very simple, cook your usual meat bolognese, add in one can of sardines, mashed them up and add brocoli. Cook till they are soft and stir them till they disintegrate into the sauce. Kai loves spicy food now. Just add grated black pepper. Healthy and yum...mi and they don't even know about it ;)

Is a tennis pro in the making?

Will we see a first Singaporean tennis player in a Wimbledon tennis tournament?

Hubby's company organized a tennis clinic for children during the summer vacation. We decided to let Kai have a go at it. At this age, it's time that we help him to discover his interest, his talent. And yes, he showed lots of potential. It was his first time on a tennis court and first time holding a tennis racket and he was so comfortable with it.

Can you spot him? (The one with the red cap)

So, will we really see a rising tennis star? The decision is his.

A lesson learned from Kai

Summer vacation is a L-O-N-G vacation. From mid-June all the way to Sept. It's almost 3 months. Back home, the longest school vacation would be just 6 weeks.

I help Kai to set out things which he can try to accomplish during this long vacation. We decided on 2 things. (1) to help him compile all his writings into a book, (2) he will learn how to cycle all on his own, without any help.

We started on learning how to cycle every evening when the sun is not too hot. Amazingly, he mastered it within 2 evenings...and without my interference.

As a mom, it's normal for me to worry about him falling down, getting himself hurt. I was holding on to his seat from behind, making sure that he would not fall. But the more I held on, the more he couldn't cycle. My intention was good but it didn't help. He kept on telling me to let go, he could manage. He tried very hard, he was all sweaty and tired...

Finally, I released and off he went, cycling away like a pro. He was so happy and I could sense his relief. He has accomplished what he has set out to do!

I have learned and been reminded once again that if I want my kids to reach their fullest potential, I have to let go. The more I grabbed, the lesser I get. As they grow up each day, I will have to let go even more. Soon, I will have to completely let go and allow them to take full responsibility of their lives but still knowing that mom will always be there.

Kai means victory...and that, he has received. Proud of his accomplishment!

Many times, in life, we are like that. We cannot trust God fully to lead our lives. We keep on hanging tightly, worried and fearful that if we let go, we will fall. But in reality, if we cannot let go, God cannot show us our full potential to live our lives to the fullest. The whole idea is to TRUST! Great men in the Bible proved to us again and again that if only we trust Him, He will show us great and mighty things.

Leading by example. That's Ann on her little tricycle, following her brother. Soon, she will cycle just as well as her brother.

Luggage got inspected

Our luggage was opened and inspected on our way to Disney World.

It is really important for you to get locks approved by TSA for your luggages when travelling to USA. To take a look at how these locks look like, go to TSA approved locks Don't worry about your things getting messed up. It was done very professionally. We didn't know our bags were inspected until we saw the note inside our bag. These locks are easily available at Robinsons.
Disney World - Food

If you go to Disney World, make sure you try their Mickey waffle. It's yummy, specially soft! Kids meal get 3 mini Mickey and adults meal get 1 big Mickey!

First real meal. Thai noodles, rice with sweet and sour pork. The rest of the days, we had burgers, chips, more burgers, more chips...I think I will not touch burgers and chips once I get home.

Beautiful Florida

All in all, it was a great trip. If you can, bring your kids to Disney World. It's a kid's haven, even for adults, it will make you very happy. It's a place where you can be you. We saw special kids even adults, enjoying themselves. They are special but that doesn't mean they are not allowed to have fun. Girls who are not pencil thin, guys who are not hunk, can be comfortable wearing anything they liked. It's a very accepting place. That's why I said, it's the happiest place on earth!
